Mojito
• 2 oz white rum (well or mid-tier)
• 0.75 oz fresh lime juice
• 0.5 oz 2:1 simple syrup
• 6–8 mint leaves
• Muddle mint gently with syrup and lime juice
• Add rum and ice, then short shake or churn
• Top with soda water
• Serve in a Collins glass
• Garnish: mint sprig and lime wheel
